Royal Chicken Biryani
A rich and aromatic biryani made with long-grain KHARIF basmati rice, fragrant spices, and tender chicken.

🌾 Ingredients
For the Rice
2 cups KHARIF Basmati Rice
4 cups water
2 bay leaves
4 green cardamoms
1 cinnamon stick
- 1 tsp salt
For the Chicken
500g chicken pieces
1 cup yogurt
2 onions (thinly sliced)
2 tomatoes (chopped)
1 tbsp ginger garlic paste
1 tsp turmeric powder
1 tsp red chili powder
1 tsp garam masala
Salt to taste
For Garnishing
Fresh coriander leaves
Mint leaves
Fried onions
Saffron soaked in warm milk
👨🍳 Cooking Instructions
Step 1 — Prepare the Rice
Rinse KHARIF basmati rice thoroughly until the water runs clear.
Soak the rice for 20 minutes.
Boil water with whole spices and salt.
Add the rice and cook until 70% done.
Drain and set aside.
Step 2 — Prepare the Chicken
Heat oil in a large pan.
Add sliced onions and cook until golden brown.
Add ginger garlic paste and cook for a minute.
Add tomatoes and cook until soft.
Mix in turmeric, chili powder, garam masala, and salt.
Add chicken pieces and cook for 10 minutes.
Stir in yogurt and simmer until the chicken is tender.
Step 3 — Layer the Biryani
In a heavy pot:
Add a layer of chicken gravy
Add a layer of rice
Sprinkle mint, coriander, and fried onions
Repeat layers.
Drizzle saffron milk on top.
Step 4 — Dum Cooking
Cover the pot tightly and cook on low heat for 15 minutes.
This allows the rice to absorb the aroma and flavor.
